這邊談的肉桂不是咖啡用的那個，而是源於中國地區的茶樹品種，又稱「玉桂」。發現至今超過百年歷史，可以作為岩茶典型代表之一，奇香異質的解釋再好不過。身為晚生種的肉桂，茶乾色澤烏褐或蛙皮青，油亮有細白點。葉尖細長，葉肉肥厚，縱脈明顯，蠟質感強。有一股濃郁的清香。

安溪肉桂茶，有薑味，味足品質好，茶青葉色淡綠，葉肉較厚，葉面成橢圓狀，葉緣略具波狀，葉齒較細，葉尖鈍，俗稱「歪尾」，摸之非常柔軟。由於肉桂的茶青如同豬肉一般綿軟，顧名思義「肉桂」。

說了這麼多，其武夷肉桂有奇香類似「桂皮、薑母、菖蒲香」通常此種品種會靠烘焙增加餘韻跟定香，甜感、岩韻皆有，發酵足花果香足。
